Geoenrich

New functions:
- Updated requirements in the cfg file to allow for more recent package versions.
- Pandas must now be in a version >=2.0.0.
- Added new source for ph.
- Unfortunately we had to remove SST-MUR due to a substantial change in PODAAC data access possibilities.
- Changed *sample* argument to *slice* in geoenrich.exports.collate_npy.

Bug fixes:
- Removed infer_datetime_format from pandas.to_datetime calls as it is deprecated.

New functions:
- Added support for a *personal_catalog* file for a reliable use of user-defined datasets (see installation instructions).
- Updated Docker image accordingly.
- Added support for OpenMPI into the Docker image to enable parallel computing (Only to be used for separate points & separate variables, otherwise data loss will occur).

- Added a collate_npy function to export multiple layers of data to a single .npy file

- Added a force\_download option to geoenrich.enrichment.enrich to ignore cache if needed.
- Included all packages into setup.cfg so the installation process becomes a one-liner. Updated documentation accordingly.

Bug fix:
- Fixed critical bug that occurred when trying to enrich a new dataset (introduced in v0.5.3).

- Ability to serialize exports.retrieve_data for batch processing. Running time divided by 20.
