Quick-python-project

The project name was not being properly set in the pyproject.toml. This issue has been fixed.

Left in an old version of the template. Swapped it out for the newer one.

I reduced the scope of the pre-release versions for the 1.0 release. The app now creates a basic Python project and establishes a command entry point in a pyproject.toml file.

*Note; this should have been moved to 0.4.0 in the last release.

- Fixes a bug that prevented the creation of project files due to platform pathing issues.
- Adds a more helpful "Summary" in the --help section.
- Some code refactoring and file renaming
- Added more tests to try and get closer to 100% code coverage.
