2.1.0

This release generates two new ChatGPT symptom tables, based on recent new ETL tasks:
- `covid_symptom__nlp_results_gpt35` (ETL) -> `covid_symptom__symptom_gpt35` (this study)
- `covid_symptom__nlp_results_gpt4` (ETL) -> `covid_symptom__symptom_gpt4` (this study)

See [RUNNING.md](https://github.com/smart-on-fhir/cumulus-library-covid/blob/main/RUNNING.md) for more details about extracting the symptoms from those tables and using them in Chart Review.
