- refactored `HDXDataSet` to `DataSet`
- added `get_metadata` function
- updated `metadata.yaml` template; adds required fields `name` and `uniprot_id` in `protein` section
- added `get_index` function

- Removed config and `omegaconf` dependency
- Add function for creating datasets from template
