Adapt workflow to supported `macos` versions.
Update `pre-commit` hooks versions.
Improve `test_compile_minimal_proto_in_a_package` robustness.

ProtoCollection.compile()` method is renamed to `ProtoCollection.compiled()`
`compiler_path` is now an optional parameter of `compiled()` methods.
