Fixed misconfigured packaging in `setup.py` and added more API documentation.

Rename project to unlockNN to reflect more general applicability to any feedforward neural network, not just GNNs!

A complete overhaul to the way unlockGNN implements its features allows representing the probabilitsic model as a single `keras.Model`. This enables much more powerful usage of the Keras API and removes a lot of redundancy. See the [updated documentation](https://unlockgnn.readthedocs.io/en/latest/) for usage details!
